Approximately 80 percent of cancers are due to factors that have been identified and can potentially be controlled, according to the National Cancer Institute. Not only do we have the potential to prevent most cancers, we can also improve the survival rates of people who have cancer. Cancer starts when one cell begins to multiply out of control. It begins to expand into a lump that can invade healthy tissues and spread to other parts of the body. But this deadly disease can often be prevented and, when it occurs, can often be stopped in its tracks.

At least one-third of annual cancer deaths in the United States are due to dietary factors.1 A recent review of diet and cancer shows that much of our risk for colon, breast, and prostate cancer, among other types, is due to dietary factors.2,3 The link between diet and cancer is not new. In January 1892, Scientific American printed the observation that “cancer is most frequent among those branches of the human race where carnivorous habits prevail.” Numerous research studies have since shown that cancer is much more common in populations consuming diets rich in fatty foods, particularly meat and dairy products, and much less common in countries with diets rich in grains, vegetables, and fruits. One reason is that foods affect the action of hormones in the body. They also affect the strength of the immune system. While fruits and vegetables contain a variety of vitamins, minerals, antioxidants, and phytochemicals that protect the body, research shows that, by contrast, animal products contain potentially carcinogenic compounds that may contribute to increased cancer risk.

Another 30 percent of cancers are caused by tobacco. Lung cancer is the most obvious example, but it is by no means the only one. Cancers of the mouth, throat, kidney, and bladder are also caused by tobacco. Other factors, including physical activity, reproductive and sexual behavior, bacterial and viral infections, and exposure to radiation and chemicals, may also contribute to the risk of certain forms of cancer.

Some dietary changes have a preventive effect for many types of cancer. Boosting your intake of vitamin-rich vegetables and fruits, for example, strengthens your immune system and helps knock out cancer cells. To help prevent cancer, it is also smart to avoid meats, dairy products, and fried foods. Choosing fiberrich legumes, grains, vegetables, and fruits helps keep many types of cancer at bay. Plant foods also contain a wide variety of cancer-fighting substances called phytochemicals.

These facts all point to choosing a vegetarian diet to help prevent cancer and improve cancer survival. Studies of vegetarians show that death rates from cancer are only about one-half to three-quarters of those of the general population. Breast cancer rates are dramatically lower in countries such as China and Japan, where diets are typically based on rice, vegetables, and bean products, with very little use of meat, dairy products, or oily foods. When people from those countries adopt a Western, meat-based diet, their breast cancer rates soar.

Defending Your DNA From Harm

Let’s look at the steps we can take to build our general defenses. Oxygen is essential to life. But as oxygen is used in the body, some of the oxygen molecules become very unstable. These unstable molecules, called free radicals, can attack cell membranes and even damage the DNA (our genetic code) in the nucleus of the cell. Damage to DNA is the beginning of cancer.

Fortunately, the foods we eat can help protect our bodies. Antioxidants, including vitamin C, vitamin E, beta-carotene, selenium, lycopene, and others, can neutralize the damaging effects of oxygen. These powerful natural chemicals come to us in vegetables, fruits, grains, and beans. People who include fruits and vegetables in their daily diets have lower rates of many forms of cancer.

Smokers have provided dramatic demonstrations of the power of vegetables and fruits. A 55-year-old male smoker whose diet is low in vitamin C has a one-in-four risk of dying of lung cancer in the next 25 years. But if the smoker has a high intake of vitamin C, either through diet or supplements, his risk drops to 7 percent. Effects of antioxidants have even been seen in childhood. When children with brain tumors were studied, it was found that their mothers consumed less vitamin C during pregnancy, compared to other women.

To step up the antioxidant power of your menus, try a baked sweet potato, Low-Fat Guacamole, or baked corn chips with Colorful Corn Salsa (recipes on page 17).

Even with vegetables and fruits in the diet, damage to the cells’ DNA will occasionally occur, so the body has built-in repair machinery. Fixing damaged DNA, which could otherwise cause cancer, requires a B vitamin called folic acid, which is found in dark green leafy vegetables, fruits, peas, and beans. Recent evidence suggests that folic acid may be particularly important in preventing HPV-related cervical cancer.8

The Dietary Reference Intake for folic acid for adult women and men is 400 micrograms per day and increases to 600 micrograms per day for pregnant women. Beans and vegetables are rich in folic acid. Asparagus, black beans, black-eyed peas, chickpeas, lentils, pinto beans, and cooked spinach all have more than 200 micrograms in a 1-cup serving.

We are all exposed to cancer-causing chemicals despite our efforts to avoid them. Some people are smokers, and quitting smoking is a vital step for them. But all of us are exposed to chemicals in the air, water, food, and household products, in addition to the carcinogens produced within our bodies as a part of our metabolic processes. While trying to minimize our exposure to carcinogens, we can also shore up our defenses against these assaults by including generous amounts of vegetables and fruits in our diet.

Foods and Immunity

Even if we follow healthy lifestyles, cancer cells will arise in the body from time to time. Luckily, we have white blood cells that roam our bloodstreams looking for these troublemakers. Some white blood cells, called natural killer cells, seek out and destroy cancer cells and bacteria. They engulf and destroy aberrant cells before they can cause damage. The function of natural killer cells and other white blood cells is improved by as little as 30 milligrams of beta-carotene per day—the amount in two large carrots.

Although beta-carotene is safe, even in fairly substantial amounts, the best way to get beta-carotene is not in pills, but in carrots, winter squash, spinach, kale, and the other packages in which nature supplies it. Beta-carotene is only one of perhaps two dozen related substances called carotenoids that occur naturally in vegetables and fruits and have varying degrees of biological activity.

Serves: 2-4

Ingredients

• 1 handful green seedless grapes
• 1 slice honeydew melon (with seeds)
• 1 orange (peeled)
• 1 whole green apple (quartered)
• 1 slice pineapple (with core)
• 1/2 banana (peeled)
• 1 stick celery (with leaves)
• 1-2 cups spinach leaves
• 1 handful parsley
• 2 cups ice

Method

1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
2. Select Variable 1. Turn the machine on and quickly increase speed to 10, then High.
3. Use tamper to press ingredients into the blades.
4. Blend for 60-90 seconds or until smooth and serve.

Notes

This recipe can be reduced by half and made in a Vitamix 0.9L Wet Container.

Avocado Green Smoothie

Makes: 0.5 - 1 Litre
Serves: 1-2

Ingredients

• 1 cup filtered water
• 1/2 avocado, no skin
• 1/2 green apple, with skin
• 1 banana (peeled)
• 1 orange (peeled)
• 1 lemon (peeled)
• 1/2 lime (peeled)
• 1 big bunch parsley

Method

1. Place all ingredients in your Vitamix in the order listed above.
2. Select Variable 1. Turn the machine on and quickly increase speed to 10, then High.
3. Use your tamper to push ingredients onto the blade.

The week is an ideal time to kick-start better eating habits to be healthier and feel happier. BEEF CHILLI TACOS

with Mushrooms & Corn
1 Lebanese cucumber, diced
1 avocado, flesh scooped out and diced
3 spring onions, sliced finely on an angle
Juice of a lime
Salt, to taste
1 tablespoon canola oil
4 Portobello mushrooms, sliced thinly
2 cobs corn, kernels sliced off
8 wholemeal tortillas
Fresh coriander leaves, to serve
Beef chilli
1 1/2 tablespoon canola oil
500g lean beef mince
2 long red chillis, sliced
1 red onion, diced
2 medium red capsicum, deseeded, diced
4 cloves garlic, peeled, finely sliced
3 teaspoons paprika
2 x 400g can chopped tomatoes

Met hod

First, make the beef chilli. Heat canola oil in a large pan over medium-high heat. Add beef mince and allow it to brown without stirring too often. Once beef has browned, add the chilli, onion, capsicum and garlic. Stir until onion becomes translucent. Stir in paprika and tomatoes. Cook for 10–15 minutes or until sauce has thickened and slightly darkened in colour.

Combine cucumber, avocado, spring onions, lime juice and a pinch of salt in a bowl. Set aside to serve.

Heat a frying pan over high heat with the canola oil. Add mushrooms and cook, turning only once or twice, until golden on both sides. Add corn kernels, stir and cook for a further minute before removing from heat.

Spoon some of the beef chilli over the tortillas, top with mushroom and corn mixture, avocado salsa and coriander leaves. Serve immediately.

Heat a wok or large frying pan over high heat. Add oil then garlic, chilli, lemongrass and coriander stems. Reserve coriander leaves for serving. Stir in ¾ of the peanuts and tumeric. Once fragrant and starting to change colour (1–2 minutes) add beef and onion. Cook until beef turns brown, then add capsicum, green beans and snow peas.

Being prepared and having greater quantities of your staple items on hand means you can rest easier, knowing that you will be able to handle whatever comes your way. Having a stockpile helps reduce stress; you don’t have to worry about paying full price for the items you need and regularly purchase. Couponing can therefore mean more money in your bank account. Couponing is not a silver bullet; you are not automatically or completely guaranteed to have everything you need, when you need it, and for less. But couponing can be a great help.

Tools and basic organization

You will obviously need some method of cutting the coupons you will soon begin to acquire. Scissors are the best and most easily accessible of all cutting tools; they give you the greatest control over what you cut. However, they are best suited for only cutting one, maybe two or three, layers at a time. Like/identical coupon insert pages and printed sheets can be stacked, possibly stapled, in order to expedite cutting. For stacked coupons, a guillotine paper cutter is ideal. However, care is needed, so as to not accidentally cut into the coupons. Other cutting tools include, but are not limited to, gift wrap cutters, paper trimmers, etc.

A calculator is crucial. Make sure to keep your cellphone handy and fully charged when you shop, because you will need your calculator feature. It might actually be easier to use a separate handheld calculator, because you will need your cellphone for other functions while you shop (i.e., internet access, grocery list). You will find the calculator helpful for keeping a running tally of your total; this is especially crucial if you need to stay within a certain budget.

Using Google Sheets or a similar spreadsheet app on your phone is a great tool to use while you shop. You can set it up before you leave the house with the items you intend to purchase, the quantity, the cost, the coupons to be used, and the anticipated totals. You can then make changes in the store as necessary, according to what they may have on hand, and what you might need to adjust. Because the totals automatically change in the spreadsheet as you update the numbers, you will always be able to maintain an accurate total while you shop, which is particularly helpful if you’re shopping on a budget.

You will need some method of storing and organizing your coupons, once you begin to cut them and organize them for your shopping trips. A small coupon wallet with sections is ideal, especially for beginners. Many couponers eventually upgrade to a large coupon binder. It is advantageous because it holds many more coupons than a small wallet. It is a liability, in that it clearly identifies you as a couponer, and thus earns you some dirty looks in the store, by customers and cashiers alike.

Expert couponers usually eventually outgrow even the large coupon binders, for storing all of their coupons. They can then switch to using hanging file folders, kept at home, for storing all of their coupons, and then they pull only what they need for various shopping trips (in which case the small wallet is once again sufficient.) Coupons are maintained in chronological order in hanging file folders, and are often stored by whole insert, as opposed to cutting them all out. The advantage is that you have a small, manageable quantity of coupons when you are in the store. The disadvantage is that, if you don’t know beforehand you need a coupon, you won’t have it when you do need it.

Getting your initial start-up set of coupons

One of the most popular types of manufacturer coupons is the coupon inserts found in the Sunday newspaper. Most Sundays (except for holiday weekends), your local Sunday newspaper will have one or more coupon inserts. The three most common inserts are Proctor & Gamble, Smart Source, and Save. Try to obtain at least one set for each member of your household (i.e., if you have 5 family members, try to get at least 5 Proctor & Gamble inserts), but no less than four. One set of coupons is not really going to be enough.

What is homeschooling?

The easiest way to define homeschooling is, schooling or learning that occurs at home. However, the concept of homeschooling encompasses so much more than what is said in this simple explanation. Homeschooling does not have to take place solely in the home, and it almost never looks like “school” in the traditional sense. A more comprehensive, yet simple, definition is that homeschooling is the learning process that occurs primarily in, but is not limited to, the home.

Homeschooling can take place in many different locations. While it is usually at the student’s home, it is not limited to their home. It can be at a friend’s home, a neighbor’s home, a family member’s home, or the home of another student. It doesn’t have to be in a home at all; it can be at a library, a museum, a planetarium, a zoo, an aquarium, a science/discovery center, or a national park. It can be in a car, a minivan, a recreational vehicle (RV)…these are just a few physical locations where homeschooling can occur.

Homeschooling as a learning process does not have to look like school at all. Learning can take place at the grocery store; a student’s learning can be reinforced in a number of ways through the use of a simple grocery shopping trip. Before leaving home, the student can create the meal plan for the next week, make note of the items needed for the meals, check the kitchen, pantry, etc. for these items, and write a grocery shopping list for the items needed. Once at the store, the student can shop for the items on the list, compare prices and sizes of the chosen products, check for any possible savings, and check out at the register. This one outing alone has taught and reinforced skills such as mathematics, home organization, budgeting, planning, decision making, just to name a few. And in no way does this exercise resemble the traditional in-school learning process.

While most homeschooled students are taught by their parents, this is also not a hard and fast rule. Sometimes, one or even both parents are not able to teach the student, and the reasons vary widely. Perhaps the parent’s or parents’ work schedule does not allow them to teach their student. Maybe it’s a single parent household. The parent might be ill or disabled. It could even just be a case of the parent not possessing the necessary skills or knowledge to teach some or all of the lessons (i.e., calculus). Yet the student can still have a holistic, age- and grade-appropriate learning experience.

Why homeschool?

Why do families decide to homeschool? The reasons for homeschooling are as numerous and as varied as the families who take this path. Sometimes the parent(s) will choose to homeschool for financial, or academic, or religious, or safety reasons. Sometimes the student will ask the parent if they can be homeschooled. The recent COVID-19 pandemic and the homebound learning that occurred as a result of it, meant that homeschooling, very loosely interpreted, became a requirement for everyone—even those that did not choose this method of learning. Here’s a closer look at some of the reasons for homeschooling.

One reason a parent may choose to homeschool is because they cannot afford to give their student the quality education they desire to give them. The family may live in an area with a substandard school district, if they are even considering public schooling at all; or they want the type of education for their student that is only offered at private schools that far exceeds their budget. Homeschooling can offer a parent the opportunity to create a rich learning environment for their student, regardless of their financial situation. Great learning does not require unlimited or vast resources; with enough creativity and research, the student’s home learning experience can be just as good as the best private schools in the country.

Another reason a parent may choose to homeschool is for academic reasons. Similar to the discussion of financial reasons for homeschooling, a parent may not have access to quality schools in their area, whether public or private. A parent may even be able to afford to pay the tuition at an expensive private school, but may not have such an option in their local area, and they are not willing to send their student to a boarding school.

A parent may also choose to homeschool for religious reasons. Regardless of the cost, quality or availability of the schools in their area, a parent may desire to educate their student at home to provide the student with a foundation in their faith. All schools, even secular (nonsectarian) schools, frame their curriculum with a particular worldview and agenda, and some parents would prefer their student not learn within the framework of their local schools’ worldview. Parents who homeschool for this reason do not face the challenge that those parents face whose students attend traditional schools—namely, that they disagree with the worldview and agenda of the school that their student attends.

Parents sometimes choose to homeschool for safety reasons. Chances are, a school does not exist anywhere where there is not some degree of bullying that is occurring. Most every student will experience some form of bullying during their traditional school experience, and some bullying will be extreme and can have lifelong aftereffects. Also, by all indications, there is an increase in incidences of drugs, weapons, etc. being brought to school by other students. In extreme cases, mass shooting events have occurred. No parent wants to subject their student to dangerous conditions such as these, just to go to school to get an education. Some parents will teach their student at home, for the sake of providing a safe learning environment for them.
